Here’s my Protein Flapjack Recipe. I know that a lot of people wonder how I do stuff, such as cooking and other day to day activities. I’ll take you through some of my daily challenges and how I overcome many practical issues as a blind person (Blind Ironman!). I do have support and help at home from my wife and daughter which helps immensely as well as friends who chip in from time to time.
I follow my Protein Flapjack Recipe once or twice a month, it’s also a great source of energy and nutrition. I don’t have the actual calories and full nutritional information so use common sense when making it. It does contain nuts!
Try making it – but it’s got to be done with a blind fold on!
- 3 cups of Quaker oats
- 3 large spoons of crunchy peanut butter
- 1 scoop of chocolate smooth protein powder
- Chopped dates (optional)
- One and a half large cup of coconut oil (melted)
- Half a large jar of honey
- Pinch of salt
Mix all of these into a bowl and then pop into a square cake tin. Make sure it’s well greased before putting into the cake tin. I have a removable base so that when I remove the cooked Flapjack from the tin it comes out easily and more importantly, intact.
I press the mixture in hard so that it is pretty compact. I preheat the oven to around gas mark 5 which is around 180 degrees I think. All guess work you know!
I leave it in there to cook for 15 to 20 minutes. Remove from the oven after this time and inhale deeply. Enjoy the aroma for a few seconds.
Leave to cool for a while and then remove the Flapjack from the tin. Cut into squares, or as I do, into uneven shapes.
